The staff at the FH Canada office gave this recipe a try - not that we didn't trust it, but we had to put our tastebuds where our mouths were! (oh, wait, naturally!) - and it was fantastic! Makes for a yummy meal. With just a simple visit to a local imports store for perhaps the cardamoms, the hardest part will be refraining from going back for thirds!
Traditional Chicken Curry

lbs chicken breasts, cut up

tsp ground pepper

turmeric powder

tsp cumin powder
2
bay leaves
2
cardamoms
2
small pieces of cinnamon
1
tsp ground garlic
1
tsp ground ginger
1
½ tsp salt
½
cup water
1
½ - 2 cups hot water
1
cup plain yogurt
½
cup onion, chopped
½ cup butter (or soybean oil)
Boiled or fried rice
Mix
pepper, turmeric, cumin, cardamoms, cinnamon, garlic, ginger, bay leaves and
salt in a ½ cup of water. Brown the onion in butter or soybean oil. Add the
spice mix and fry for five minutes. Add the yogurt and fry for three minutes. Add
chicken breasts and brown for about 10-15 minutes over medium heat. Add 1 ½
cups hot water (if you like it saucy, add 2 cups). Cover and simmer slowly
until everything’s tender. Serve with boiled or fried rice.
